Making Fried Rice:The Ghanaian way Rachel's Way!

Besides eating, I love to cook. I'll read a cook book and try something new as long as I have some free time. For a while I've been making this meal for myself and my family. I started making this while in Ghana because fufu and soup(google it) was the only available meal on Sundays. I just didn't want to eat that. Instead I would take the chicken breast from the soup, wash it and fry it together with some rice and onions. This is so easy to make and I don't have specific measurements for the ingredients but I'm sure you can always create your own style.

Ingredients and Method

I usually start by steaming/frying the meat(chicken, beef-stir fry, or shrimp, tofu-if you're a vegetarian). Well of course I marinate it with some soy-sauce, ginger and pepper(blended mix). Then everything else goes in. I usually like to get coloful veggies, red, green, orange bell peppers, scallions, and carrots. I usually cut them manually but if you're lazy you can just buy a pack of frozen mixed veggies. Yes! don't forget the eggs(scrambled). Mix everything (scrambled eggs, fried meat, slightly fried veggies) together systematically and then add the rice. If you want some color add some soy-sauce. It all depends on your taste. I like a lot of color so I add soy sauce and some Spanish seasoning (Sazon) and some brown(some= very little) sugar and voila! I have a meal. I figure this process might be confusing so here are some pictures to help out :)
